Eating My Vegetables...

I have quite a lot of zucchini up in the garden and having already put some in a pasta dish and a stir fry I was bound to try something baked next. I found this cake recipe online, it has orange zest which makes is YUMMY and I replaced the glaze with a thick fudge topping (1 tub of cool whip and a cup of chocolate chips melted, mixed, and poured on top of the bundt cake). Mmmm...twenty seconds in the microwave and it's a moist slice of gooey heaven, I think I've found my new favorite dessert! This cake is beautiful, tasty, AND it counts as a serving of vegetables, so I ate the rest today as an appetizer before lunch, because I needed it! I would've posted a picture but I ate the thing too fast. Maybe I'll have to go get some more zucchini and start over...

Chocolate Zucchini Cake Recipe

Ingredients
2 1/2 cups regular all-purpose flour, unsifted1/2 cup cocoa2 1/2 teaspoons baking powder1 1/2 teaspoons baking soda1 teaspoon salt1 teaspoon cinnamon3/4 cup soft butter2 cups sugar3 eggs2 teaspoons vanilla2 teaspoons grated orange peel2 cups coarsely shredded zucchini1/2 cup milk1 cup chopped walnuts or pecansGlaze (directions follow)
Method
Preheat the oven to 350°F.
1 Combine the flour, cocoa, baking powder, soda, salt, and cinnamon; set aside.
2 With a mixer, beat together the butter and the sugar until they are smoothly blended. Add the eggs to the butter and sugar mixture one at a time, beating well after each addition. With a spoon, stir in the vanilla, orange peel, and zucchini.
3 Alternately stir the dry ingredients and the milk into the zucchini mixture, including the nuts with the last addition.
4 Pour the batter into a greased and flour-dusted 10-inch tube pan or bundt pan. Bake in the oven for about 50 minutes (test at 45 minutes!) or until a wooden pick inserted in the center comes out clean. Cool in pan 15 minutes; turn out on wire rack to cool thoroughly.
5 Drizzle glaze over cake.
Glaze: Mix together 2 cups powdered sugar, 3 Tablespoons milk, and 1 teaspoon vanilla. Beat until smooth.

Oh I wish that I had checked your blog last night! I haven't had chocolate anything in sooo long but last night I needed some BADLY! I made Travis stop at the store on his way home from work and get me a chocolate cake. It wasn't as good as I had hoped it would be. Maybe today I will have to make your cake! After all you did say it had vegetables in it!:)

You can make it Ariann, but don't tell your Mom it was my idea. You know how I've always been the peer pressuring my diabetic friend to throw back the sugar! I'm a bad influence. But yeah, it does have vegetables in it, which balances everything out!
